Grilled Fish with Pistachio Gremolata
This grilled fish recipe is full of bright and savory flavors. The pistachio gremolata (a fancy word for a sauce) is the star of this recipe with fresh parsley, lemon juice, and minced garlic. And it's surprisingly easy to make! We used Orange Roughy fish but any white fish will work. This recipe can also be broiled instead of grilled, making it a tasty and healthy dinner option year round.

INGREDIENTS:
- 1/2 cup no-shell pistachios
- 1 cup fresh parsley
- 2 tsp lemon zest (use a zester like this one)
- 1 cup California extra virgin olive oil
- 4-5 fillets of Orange Roughy or your choice of white fish
- 2 tsp crushed red pepper
- 1 tbsp minced garlic
WHAT YOU'LL NEED:
- Non-stick pan - we love this Gotham one
- Sharp kitchen knife
- Grill spatula
- Cutting board
- Food processor
- Mixing bowl
DIRECTIONS:
- Heat non-stick pan over medium heat and toast the pistachios for 1-2 minutes to release their flavor
- Zest your lemon and chop your parsley
- In a food processor, pulse pistachios, parsley, lemon zest and garlic until coarsely ground
- Transfer to a mixing bowl
- Add olive oil and crushed red pepper
- Add salt and pepper, to taste
- Set aside gremolata
- Drizzle both sides of fish with olive oil
- Grill fish over medium heat, about 5 minutes per side
- Remove fish from grill and serve right away
- Top the fish with pistachio gremolata
- Drizzle with olive oil and top with fresh parsley
- Enjoy!
