Real Tabbouleh Served On Top Of Cabbage Leaves

Never heard of tabbouleh? Get ready for your new favorite go-to appetizer! Tabbouleh is an Arab Middle Eastern vegetarian dish that embodies all the wonderful and unique flavors of the culture. The bulgar wheat has a similar texture to quinoa and is cooked much like the way we cook rice. The smell and taste of the parsley in this dish brings an instant spark of freshness to the dish, especially with the crunch of the cabbage leaves. We highly recommend giving this dish a try. INGREDIENTS:

  • 1 Cup cooked bulgur wheat
  • 2 Scallions
  • 1 Small red onion
  • 1 Plum tomato
  • 1 ½ cups fresh parsley
  • 1 Lemon, juiced
  • ½ TBSP lemon zest
  • 1 ½ TBSP olive oil
  • 1 head of cabbage or lettuce

DIRECTIONS:

  • Place dry bulgur wheat into a medium/large mixing bowl.
  • Chop your fresh parsley, scallions (use red and green parts), red onion, and tomato. Add to bowl.
  • Zest the yellow part of a lemon into the bowl.
  • Give the ingredients in the bowl a quick toss to mix.
  • Squeeze the juice from a lemon into the bowl. You can use more or juice depending on your citrus preference.
  • Add olive oil to bowl.
  • Add salt and pepper to taste.
  • Mix all ingredients together. Set aside.
  • Peel medium to large size leaves off of the head of cabbage or lettuce. Arrange them on a serving tray.
  • Place your tabbouleh mix into a smaller serving bowl.
  • Serve and enjoy!
