Grilled Chicken Caprese

Grilled Chicken Caprese
  • 4 chicken breasts
  • 2-3 tomatoes, sliced
  • Fresh mozzarella, sliced
  • Balsamic glaze
  • Salt and pepper, to taste
  • 3 Tbsp Italian seasoning
  • 2 Tbsp olive oil


  • Season chicken breasts with olive oil, Italian seasoning and salt and pepper
  • Place chicken breasts on a medium-high grill
  • Grill chicken until the inside is no longer pink and the juices run clear
  • Place sliced tomatoes on grill, about 1 minute per side or until grill marks are visible
  • Top chicken breasts with sliced grilled tomatoes and sliced mozzarella
  • Top with drizzled balsamic glaze
  • *Tip: A simple side salad goes great with this dish!
